Snickerdoodle Cookies
Who doesn’t love a good snickerdoodle? These cookies are always a fun and easy go to cookie.
They can also be made vegan! Sub out the butter for coconut oil and the eggs for flaxseed egg replacements (1 Tbsp ground flaxseed, 3 Tbsp water).
Snickerdoodle dough
•2 sticks margarine or butter, softened (margarine will make for softer cookies, butter will give a little more crispiness on the outside)
•1 cup sugar
•1/2 cup light brown sugar
•2 eggs
•1 tsp vanilla
•2-3/4 cups flour
•1 tsp cream of tartar
•1 tsp baking soda
•1 tsp salt
•1 tsp cinnamon
Cinnamon Sugar
•1 Tbsp cinnamon
•3 Tbsp Sugar
Preheat oven to 350. Mix together the softened margarine/butter and both sugars. Add in the eggs and vanilla and mix. Add together the dry ingredients and mix into dough. Using a cookie scoop, scoop balls of dough and roll into balls. Roll each cookie in the cinnamon sugar mixture and bake for 7-9 minutes (until the edges are golden brown).
