Brown Butter Butterscotch Chocolate Chip Pretzel Cookies
Get ready for this mouthful of a name…brown butter butterscotch chocolate chip pretzel cookies. (Anyone have any better name ideas? 😂)
These cookies are both salty and sweet and I don’t know about you, but I LOVE that combo.
Recipe:
-2 sticks butter
-1 cup light brown sugar
-1/2 cup sugar
-2 eggs
-1 tsp vanilla
-2-2/3 cups flour
-1 tsp baking soda
-1 tsp salt
-1 cup dark chocolate chips
-1 cup butterscotch chips
-1/2 cup crushed pretzels
Preheat oven to 350. Next we are going to brown our butter. Heat a skillet over medium heat and add the butter. Once the butter is melted it will eventually start to foam. You will want to keep the butter moving until the foam starts to turn a brown color. Once the foam has turned brown, remove from heat and allow to cool for at least half an hour.
Once the butter has somewhat cooled, add in both sugars and stir till combined.
Then add the eggs and vanilla and stir till combined.
Then add in the dry ingredients (flour, baking soda, and salt). Remember to always lightly spoon the flour into the measuring cup. Never scoop measuring cups into the flour or it will get too packed down.
Finally, stir in the dark chocolate chips, butterscotch chips, and crushed pretzels. I recommend using dark chocolate chips rather than milk or semi-sweet chocolate because the dark chocolate balances the sweetness of the butterscotch. For my pretzels I used pretzel crisps since they are flat and really easily mixed into the batter.
Once your batter is fully mixed, scoop dough onto cookies sheets and bake for 8-10 minutes (I baked mine for 9).
