Matcha Cookies
I have wanted to try making matcha cookies for months, and I finally got around to it! These cookies are soft and chewy with vanilla icing. The sweetness of the icing balances the bitterness of the matcha for a tasty and not-too-sweet treat.
For the cookie:
1 stick of butter, softened
1/2 cup sugar
1/4 cup brown sugar
1 egg
2 tsp vanilla
1-1/4 cup flour
1/4 cup matcha (culinary grade)
1/2 tsp baking soda
1/2 tsp salt
For the icing:
2 cups powdered sugar
2 Tbsp butter, softened
1 Tbsp vanilla
1 Tbsp milk
Method:
•Preheat oven to 350
•In a bowl, mix together the butter and both sugars
•Add in the eggs and vanilla and stir to combine
•Add in the rest of the ingredients and stir to combine
•Using a cookie scoop, portion out cookie dough on a baking sheet and bake for 7-9 minutes
•While the cookies are baking, mix together all ingredients for the icing using a mixer or a whisk
•Once the cookies have cooled completely, frost the cookies with the icing and enjoy!
