Peanut Butter Chocolate Chip Muffins

Ok, these might be my new favorite muffins. I made these gluten free so that I could eat some, but my non-gluten-free family ate them so quickly that I almost didn’t get a picture. My boyfriend was equally as shocked that they were gluten free. So if you’re looking for a muffin to please the masses, this is it.

1 stick butter, softened
1/4 cup avocado oil
1 cup dark brown sugar
3 eggs
1 tsp vanilla
1 cup smooth peanut butter
2 cups GF flour (I used King Arthur one for one)
2 tsp baking powder
1-1/2 tsp baking soda
1/2 tsp salt
1 cup full fat coconut milk (canned)
1 cup dark chocolate chips
Coarse sugar

-Preheat oven to 350.
-Mix together butter, oil, and brown sugar
-Add eggs and vanilla and stir to combine
-Add peanut butter and stir to combine
-Add GF flour, baking powder, baking soda, and salt and stir to combine
-Mix in coconut milk
-Fold in chocolate chips
-Line a muffin tin with liners and use a large cookie scoop to drop dollops of dough into each cup, filling it most of the way full. (Makes 16 muffins)
-Sprinkle with coarse sugar (optional)
-Bake for 20-23 minutes
