Double Chocolate Gluten Free Muffins
I love all things chocolate so I have been on a quest to develop a chocolate muffin recipe that doesn’t taste gluten free and I’m very happy to have finally landed on this recipe.
3/4 cup oil (I used melted coconut oil)
1 cup dark brown sugar
3 eggs
1 tsp vanilla
2 cups gluten free flour (I used King Arthur GF flour)
1 cup Dutch process cocoa powder
2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1 can full fat coconut milk (the kind in the can, not carton. This ingredient is a game changer!)
1 cup dark chocolate chips
Flaky sea salt
Preheat oven to 350. Mix together oil and sugar. Add in eggs and vanilla and stir to combine. Add in gf flour, cocoa, baking powder, baking soda, and salt. Stir to combine. Mix in coconut milk and stir to combine. Fold in chocolate chips. Line muffin tin with parchment paper liners and evenly distribute batter. (Makes 20 muffins). Lightly sprinkle with flaky sea salt. Let the batter rest for 5-10 minutes. Bake for 18-22 minutes (I baked for 20 minutes.) Enjoy!
