Santiago Cake

When life gives you lemons, make Santiago cake! This recipe is crazy easy, naturally gluten free, and made with only 4 main ingredients.

I first learned about this cake because my sister’s coworker hiked the Camino de Santiago (if you’re unfamiliar it is a pilgrimage trail in Spain). After the trip she invited us over and served Santiago cake. Santiago cake is from Galicia, Spain but can be found all throughout Spain.

-4 eggs
-1-1/3 cups sugar
-2-1/4 cups almond flour
-zest from one lemon
- 2 Tbsp lemon juice
-powdered sugar for dusting

Preheat oven to 350. Whisk together eggs and sugar until frothy. Add in the lemon zest and lemon juice. Gently add in the almond flour. Once mixed, pour batter into an 8x8 pan lined with parchment paper. Bake for 30-35 minutes. Once the cake has cooled dust with powdered sugar (traditional Santiago cake has a cross outlined in the powdered sugar).
